Food For Thought - Spicy Turkey Meatballs
Because I am a weightlifter, I am allowed a lot of protein. My trainer, Ray, and I keep a close eye on my diet – most of the time it is chicken. When we are building me up to have more muscle, I get red meat once or twice a week. Turkey is one of the meats I can have more of – though Ray does prefer I consume, mostly, chicken breast. When you buy ground meat, you never know how much fat has been thrown into the grinder; with chicken breast, I can trim off all the fat.
When I AM eating turkey, this is my favourite thing to make.
I make a lot of meatballs because Pat and I MUST have food that is in the fridge and ready to eat. We have very busy schedules; we also leave the house for long stretches of time and need food that travels well because we must fuel our bodies every two to three hours. So the watchword here is POPABLE. If a food is Popable, it fits into our specific needs.
Meatballs are popable.
For this meatball I buy fresh ground turkey, drop it into a big mixing bowl and add onion (either the real deal, diced; or powsder) and garlic (ditto) and crushed red pepper. I also add poultry seasoning – when working with turkey, this is an almost essential spice (my opinion!). Mix mix mix.. Add some diced red pepper (delish) and some diced up sundried tomatoes. Mix mix mix. Get a tablespoon and make meatballs out of normal sized spoons (not HEAPING spoonfuls, you know? Normal size spoons). You can just clump them with your hand or you can get real thorough and roll them.
Then cook ‘em.
DON’T FRY YOUR FOOD!!!
I use a NuWave oven. It’s an indoor grill and things don’t cook in their own fat. You could use a George Foreman or your broiler – just DON’T FRY these. Don’t fry your food. Ok?
Once these are cooked, you can eat them immediately but make sure you make a lot so that you can have them in the fridge when you want a snack. They are popable and must better for you than chips or a candy bar. I eat these cold, reheated, any way I can cause they are yummy.
My friends like them a lot, too.
