Food For Thought - A Quick and Healthy Hot Afternoon Tea

You’ll need two small skillets for this one. It is so easy and so delish.

Some of those popable turkey meatballs are in the fridge, right? And some cartons of eggs, too, right? In one skillet, warm 6 or 8 of those meatballs through, using a DRIZZLE of olive oil – no more. In the other skillet, spray an even coat of PAM olive oil cooking spray. When the meatballs are warmed through, cook up two fried eggs – it’s just PAM olive oil and it’s just two egg yolks. A yolk now and then isn’t going to kill you and it’s fun and, with this meal, tasty.

Serve the eggs and the meatballs side by side with a grind or two of fresh pepper…. Great afternoon tea.
Delish.
